By our own choice, we do not age grappa for very long periods of time, however, a proper period of rest in wood is an added value that can be given to grappa.
The sensations of fullness and roundness can be enhanced by proper aging; 12 months in Acacia for Regina dei Cuori, 18 months in Oak for Riserva, Cento Cotte di Amarone and the magnum Ars Distillandi.
Amarone Riserva 1100 grappa remains in Oak wood for three years.
During this period, grappas acquire tertiary aromas from the woods, are enriched with hints of spice and turn a beautiful amber color, more or less dark depending on the period of aging.
