We chose to work with raw materials from our own territory and to respect the natural rhythm of time, without forcing it. <\/p><p>Being a small artisanal distillery has allowed us to follow certain principles \u2014 such as working <strong>only with pomace that comes from local wineries<\/strong>, and doing so <strong>in harmony with the rhythm of the seasons<\/strong>, and the harvest times of each grape variety.<\/p><p>We\u2019ve chosen to stay small and artisanal \u2014 to do things right, and to craft truly good
